Healthy Oat Bread
Ingredients (cuts into 14 slices)
150 ml oats ( 3/5 cup)
250 ml oat bran (1 cup)
375 ml flour, sifted (1½ cups)
250 ml whole-wheat Pronutro (1 cup)
5 ml salt (1 teaspoon)
20 ml baking powder (4 teaspoon)
20 ml sugar (4 teaspoons)
1 egg
200 ml milk, low fat (4/5 cup)
20 ml water (4 teaspoons)
How to make it
- In a large bowl, mix the oats, oat bran, flour, Pronutro, baking powder, salt and sugar.
- Beat egg, milk and water together for not longer than 1 minute.
- Combine egg mixture with flour mixture and stir until dry ingredients are just moistened.
- Work the dough into a soft ball with your hands, using more oats to prevent it from sticking to your hands. Cover the ball of dough with oats and form into a round loaf shape. Place on a baking sheet and bake for about 1 hour at 180° C.
The Pronutro can be substituted with 125 ml (½ c) soy flour and 125 ml (½ c) digestive
(wheat) bran. To check if the loaf is done, tap the bread with your knuckle. If it sounds
hollow, it is baked through and ready to take out of the oven. A very easy bread to make
for BBQs and to have with soup. This bread freezes well, whole or sliced. Each slice
can be thawed in a toaster when required.
